After my youngest child entered school, I wanted to find a part-time job to scratch my itch and doing something I love to do: cook!
I started my cooking career baking for a St. Louis catering company, Something Elegant Catering. I have a passion for great food and especially dessert. In this professional kitchen environment, I learned how to finesse the most out of food by using quality ingredients and professional techniques. I worked for three years honing my culinary skills and learning the difference between good and great. I was encouraged to be creative and come up with new desserts and try different things, so I ran with it.
On my own, I started baking more treats for family and friends and even decorating cakes, for weddings, birthdays, baby showers. I loved being able to design and play with different flavors, colors and textures. As cupcakes were exploding in popularity, I thought making cakes could be a good avenue for me. Everybody likes cake, right!? I was disappointed and even bored by cake. If I am going to be naughty and indulge, I want to go for the gusto and enjoy a truly delicious, mind-blowing, flavor loaded, bite-sized treat that is highly satisfying and not a sugar blob.
So while I was tinkering in cake, I was making decadent chocolate desserts for myself and enjoying them with my glass of wine or cup of coffee, occasionally sharing them. I soon realized my passion, and a lot of other people’s, was for chocolate. I shifted my focus to chocolate, and started making truffles and other sinfully chocolate treats for my family and friends. The more I made, the more excited I became to push the envelope and try new things. I spent countless hours in the kitchen testing flavors and chocolate varieties, figuring out what works and what doesn’t. I handed out more and more samples and received rave reviews for my creations.
After three years of catering experience, I started Oh Sheila! Chocolates so I could concentrate on my chocolatiering. After tweeking and adjusting and perfecting, I have a product that I am confident offers a unique chocolate experience for every palette. I am dedicated to bringing you a chocolate that reflects myself, I believe that if you are going to indulge, as everyone should from time to time, it should be tantalizing for the eyes as well as the tast buds. I like high-quality desserts that make me feel like I am really having something special, and that is what I want you to experience when you enjoy one of my chocolates.
We have all opened that lovely box chocolates only to be met with the disappointment of a waxy, blah hunk of candy off of an assembly line with a ho-hum filling. Not at all the exotic delicacies we know and love, the truffle. Experts say chocolate is good for you. I say Oh Sheila! chocolates are just what the doctor ordered! I am thrilled that I made the choice to go with making chocolates, it’s a happier place and I want to share it with you! Any occasion you have for a cake can also be a chocolate occasion!
Working in small batches, every Oh Sheila! chocolate is made by hand with precision and care to bring you only best. I use high-quality chocolate and ingredients. When you break through the crisp outer shell, you are greeted by a creamy smooth filling. A blend of fine liqueurs, herbs and spices give each each chocolate its luscious, rich flavor. Decadent and delicious, the chocolates speak for themselves!
